VINEYARDS Premium fruit was selected from a single heritage vineyard on the banks of Jacob’s Creek.
VINTAGE CONDITIONS Good winter rain was followed by the driest spring in a decade and a summer that changed from cool to hot. Premium fruit resulted, with the reds strongly coloured and richly flavoured.
WINEMAKING Hand harvested and fermented in 300 litre barrels with 20% whole bunch. Warm soaked and slow start to ferment using wild yeast. Crushed using historic hand operated crusher. Hand plunged and pressed using a historic wooden press. Matured in a single new America oak barrel.
